Referred to as stockfish because the head was not traditionally part of the export, cod heads remained in Iceland where locals used to eat it boiled with a bit of salt. Today, Icelandic cod is exported all over the world, and both stockfish and dried cod heads are exported to Italy as well as Nigeria – the largest market for dried fish in the world – but Auðunsson feels strongly that Icelanders should still be eating those cod heads.
